Wake up to your new morning breakfast.
This wonderful recipe is high in protein, omega 3, antioxidants and fibre as well as being sugar-free. You won’t believe how amazing these tastes.
I normally make a batch on Sunday and divide it into portions so I can enjoy it throughout the week. It’s delicious hot or cold served with your choice of milk or a good dollop of yoghurt. You don’t even have to bake this recipe…and enjoy simply as a bowl of Bircher.
Oats are high in soluble beta-glucan fibre to help reduce cholesterol and keep you fuller for longer. Oats are great for supporting digestive health and keeping you regular. Blueberries are packed with antioxidants, vitamins, and fibre, promoting heart health, brain function, and overall wellness. Flaxseeds and walnuts are high in omega-3, antioxidants and fibre to support brain function and cardiovascular health. Omega 3 can also improve insulin sensitivity and promote fat burning.

Ingredients

  • 2 cups rolled oats
  • 2 tablespoons protein powder optional, plant based
  • 1 tablespoon ground golden flaxseed
  • 2 cups almond milk your choice
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 200 g mixed berries
  • 60 g walnuts or flaked almonds

Method

  • COMBINE the oats, protein if using, flaxseed, milk of choice, cinnamon, vanilla and baking powder into a bowl. Mix well. Allow this to soak for 15 minutes or overnight to allow the oats to soften and absorb the milk.
  • FOLD IN the berries and nuts.
  • POUR the mixture into a baking dish. Garnish with extra berries or other fruits if you like.
  • BAKE for 30 minutes.
  • SERVE warm or cold with hot or cold milk of choice and enjoy.
You can serve the baked oatmeal either warm or cold. I love to cook completely and slice the baked oats into squares to enjoy as a snack or quick portable breakfast.  Add more protein and mix in 2 generous tablespoons organic pea protein powder.
