About the recipe

My Sushi Salad is everything you love about sushi—clean flavours, beautiful texture, and feel-good nourishment—without the rolling. Light yet satisfying, it’s the perfect bowl for lunch or an easy dinner, using simple ingredients you may already have on hand. Cold rice (or cauliflower rice for a low-carb option) is tossed with crisp vegetables, mineral-rich seaweed and a gentle splash of verjuice or rice wine vinegar for balance and brightness.
Topped with wild smoked salmon, creamy avocado and optional soft-boiled eggs, this bowl delivers high-quality protein, omega-3 fats, fibre and essential minerals to support energy, gut health and satiety. Tamari adds savoury depth, while a spoon of mayo brings just the right touch of indulgence—because healthy food should always taste amazing.
Fresh, flexible and endlessly adaptable, this is one of those simple bowls that leaves you feeling light, nourished and completely satisfied—the kind of food your body genuinely thanks you for.

Why Cold Rice Is So Good for You:
Using cold, cooked rice isn’t just about convenience—it comes with real health benefits. When rice is cooked and then cooled, part of its starch structure changes into what’s known as resistant starch. This acts more like fibre in the body, feeding your good gut bacteria and supporting healthy digestion.
