About the recipe

Creamy eggs, fresh herbs and protein-rich cottage cheese come together in this simple, nourishing egg salad that’s light, fresh and seriously satisfying.
This is my healthier take on classic egg salad — packed with beautiful wholefood ingredients and loaded with protein to keep you feeling energised and full for hours.
The cottage cheese creates the most delicious creamy texture while boosting the protein naturally, without needing loads of mayonnaise. Fresh herbs, lemon and seasoning lift everything beautifully, making it feel vibrant and fresh rather than heavy.
I’ve also included a hummus option for a completely dairy-free version that’s equally creamy and delicious.
Perfect served on toasted sourdough, in wraps, spooned into lettuce cups or alongside crunchy vegetables for an easy high-protein lunch.
High in protein and rich in choline and B vitamins. Cottage cheese adds extra protein and calcium. Naturally gluten free and easy to meal prep. Delicious dairy-free option using hummus. Fresh, simple and ready in minutes

NOTES + INSPIRATION
Hummus creates the most beautiful creamy dairy-free version and pairs perfectly with the eggs and pickles.
Greek yoghurt makes the salad extra light, fresh and tangy while boosting the protein naturally. Add sliced avocado, sprouts or micro herbs for extra freshness and nourishment.
Spoon into lettuce cups for a lighter low-carb option or serve on toasted sourdough, wraps or rye bread. Keeps beautifully in the fridge for up to 3 days, making it perfect for healthy meal prep lunches.
