Notes & Inspiration
This is the kind of pizza recipe that becomes a weekly ritual — simple, relaxed and endlessly adaptable. The base is light, crisp and digestible, and once you have the dough mastered you can take it in any direction you like depending on how you feel, what’s in the fridge, or how nourishing you want the meal to be.
I love making one classic margherita for myself with basil and good olive oil, and something a little nostalgic for Paul (ham, cheese and pineapple always wins in our house). It’s relaxed, unfussy and very us — good food, shared at the bench, straight from the pan.
Make it Gluten-Free
If you’re avoiding gluten, this recipe works beautifully with a good quality gluten-free plain flour blend. Choose one that already contains xanthan gum for structure.
You may need to: Add an extra tablespoon of olive oil for softness - Let the dough sit for 10 minutes before shaping so the flour hydrates - Press the dough out gently with a little olive oil. Lower-Carb Options If you’re looking for a lighter, lower-carb pizza night, try one of these variations: 1. Cauliflower Base
Steamed cauliflower, squeezed dry and mixed with egg and Parmesan makes a lovely light base. Cook it first in the pan to firm up before topping. 2. High-Protein Wrap Base
Use a thin high-protein wrap or flatbread. Crisp it in the pan, then top and bake. Perfect for a quick weeknight version. Topping Inspiration Think of this as your blank canvas. Some favourites:
Roasted pumpkin, feta + rocket
Mushroom, thyme + fontina
Zucchini ribbons, lemon + ricotta
Pesto, tomato + burrata Serving Vibe Serve straight from the pan. Big salad on the side and a glass of wine. Perfect pizza doesn’t need to be complicated — just a light, crisp base, beautiful ingredients and someone to share it with.
