About the recipe

A lighter, nourishing version of the classic creamy chicken dish
Celebrating love, life and 36 beautiful years of marriage, this One–Pan Marry Me Chicken is a dish made to share. It’s comforting, flavourful and deeply satisfying, yet light enough to enjoy any day of the week.
Golden chicken is gently simmered in a fragrant tomato - infused bone broth, then finished with a touch of Greek yoghurt or light cream for a silky, nourishing sauce. Fresh spinach and basil bring brightness, while a squeeze of lemon lifts every flavour.
This version is designed to feel good—naturally gluten-free, lower in carbohydrates and incredibly versatile. Serve it with steamed greens for a light, wholesome meal, or pair it with pasta, rice or crusty sourdough to soak up the delicious sauce.
There’s also a beautiful vegetarian option using creamy cannellini beans, making this a dish everyone can enjoy.

Ingredients

Switch measurement units

  • 750 g skinless chicken thigh fillets cut into chunks
  • 1 tablespoon extra-virgin olive oil
  • Sea salt and freshly ground black pepper
  • 1 teaspoon dried oregano
  • 2 brown onions sliced
  • 100 g soft sun-dried tomatoes not in oil, sliced
  • 1 generous tablespoon tomato paste
  • 2 cups 500 ml chicken bone broth or good quality chicken stock
  • 2 spoonfuls Greek yoghurt or a splash of light cooking cream
  • 60 g baby spinach leaves about 2 large handfuls
  • 30 g parmesan finely grated
  • Handful fresh basil leaves plus extra to serve
  • 1 lemon for serving
  • Optional to thicken:
  • 1 teaspoon cornflour mixed with a splash of water or milk

Method

  • Heat olive oil in a large deep pan over medium–high heat.
  • Season the chicken with salt and pepper, then cook until lightly golden.
  • Add sliced onions and cook for 5 minutes, stirring occasionally, until softened and lightly golden.
  • Add sun-dried tomatoes, tomato paste and oregano.
  • Pour in the chicken bone broth and bring to a gentle boil.
  • Reduce heat, cover and simmer for 15–20 minutes, or until the chicken is tender and the sauce has developed flavour.
  • Add a splash of water if needed to loosen the sauce.
  • Stir through Greek yoghurt, milk or light cream, followed by spinach and basil.
  • Cook gently until the spinach has wilted and the sauce is silky.
  • If you prefer a thicker sauce, stir in the cornflour slurry and cook briefly until thickened.
  • Serve with a squeeze of fresh lemon juice, extra basil and grated parmesan.
  • Enjoy straight from the pan or individual bowls along side steamed cabbage or vegetables for a low carb option. You can also serve with pasta, rice or polenta...or a slice of focaccia.
ADDITIONS
For added fibre and goodness add a tin of drained cannellini beans.

SERVING IDEAS

Steamed cabbage, broccoli or cauliflower mash (low-carb option)
Pasta, rice or polenta
Crusty sourdough or focaccia to soak up the sauce
VEGETARIAN / VEGAN OPTION
Swap chicken for 2 x 400 g tins cannellini beans, drained and rinsed
Use vegetable stock instead of chicken stock
Replace parmesan with 2 tablespoons nutritional yeast flakes
Add the beans in the final 8 minutes of cooking and simmer gently to heat through.
This dish is all about balance—comforting yet light, simple yet full of flavour.
Using bone broth adds depth and nourishment, while yoghurt or milk keeps the sauce creamy without heaviness.
