These gently poached pears are a beautifully simple way to enjoy fruit in its most nourishing form. Made with unsweetened apple juice, water and a squeeze of fresh lemon, they’re naturally low in added sugar, low GI, high in fibre and easy to digest, making them kind on the gut and perfect for everyday eating.
Slow simmering softens the pears while preserving their natural sweetness, flavour and structure — no heavy syrups, no refined sugar. You could also use 100% water to poach the pears in place of the apple or pear juice if you wish. The end result is a light, versatile fruit compote that works just as beautifully in baking as it does spooned over yoghurt or granola.

Ingredients

  • 6 firm pears
  • 500 ml unsweetened apple juice or water
  • 500 ml water
  • 2 lemons

Method

  • PEEL the pears roughly, leaving some of the skin on the pear for aesthetics.
  • PLACE pears into a saucepan with apple juice, water and lemon juice.
  • BRING to the boil then reduce the heat to a low simmer.
  • COVER pears with a cartouche (a piece of baking paper) or with a lid.
  • SIMMER gently for 15–20 minutes or until tender. Turn them over occasionally to make sure they poach evenly.
  • COOL + REFRIGERATE until needed.
Spoon over natural yoghurt for a light, nourishing breakfast.
Serve with granola or bircher muesli for breakfast
Add to porridge or chia pudding
Pair with soft cheeses like ricotta or goat’s cheese.
Store pears in their poaching liquid in the fridge for up to 5 days — the flavour improves as they sit.
