About the recipe

My Niçoise Salad is my fresh, modern take on the French classic — lighter, greener and perfectly suited to warm summer days. Crisp baby gem lettuce and peppery rocket form the base, layered with juicy tomatoes, blanched sugar snap peas, creamy eggs and tender tuna for a dish that’s both nourishing and satisfying.
Finished with a sharp, elegant red wine vinegar dressing, briny olives and capers, this salad strikes the perfect balance between freshness and flavour. It’s naturally high in protein, rich in antioxidants and full of vibrant seasonal produce — ideal for lunch, a relaxed dinner, or entertaining.
Simple, beautiful and endlessly versatile, this is the kind of salad you’ll come back to time and time again. Serve it just as it is, or pair with crusty sourdough to soak up every last drop of that tangy dressing.

Notes + Inspiration
Serve with good quality sourdough to mop up the punchy red wine dressing — it’s worth it.
For extra protein, add extra tuna, or a soft and creamy cannellini beans. Swap baby gem for cos or butter lettuce.
Add steamed new potatoes.
