About the recipe

This is the kind of fresh, feel-good salad Paul and I could happily eat every night of the week.
Crunchy cos lettuce tossed with spring onion, creamy feta, toasted pine nuts and fresh basil in the simplest red wine vinaigrette or verjuice dressing. Light, refreshing and deeply satisfying, it’s the perfect Mediterranean-style salad that works beautifully on its own or served alongside grilled chicken, eggs, chickpeas or roasted potatoes.
I especially love using verjuice in the dressing when I have it on hand. It gives the salad a softer, gentler acidity that feels incredibly fresh and elegant, although classic red wine vinegar is equally delicious and gives more of that rustic Italian chopped salad flavour.
This recipe is simple food at its best. Minimal ingredients, beautiful textures and fresh flavours that come together in minutes.
We served ours with Paul’s incredible parmesan crusted roasted potatoes on the side…crispy, golden and completely addictive. Honestly the perfect combination.

SALAD

  • 2 baby cos lettuces | romaine finely chopped
  • 2 spring onions sliced or red onion
  • ¼ cup feta cheese crumbled or pecorino cheese
  • 2 tbsp toasted pine nuts
  • handful fresh basil leaves

DRESSING

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar OR 3 tbsp verjuice
  • 1 tsp Dijon mustard
  • sea salt + white pepper
  • pinch of oregano

OPTIONAL ADD-INS

  • 240 g chickpeas
  • grilled chicken
  • roasted potatoes

Method

  • WHISK the olive oil, red wine vinegar or verjuice, Dijon mustard, salt and white pepper together until beautifully emulsified.
  • COMBINE the chopped cos lettuce, spring onion, feta, pine nuts and basil into a large serving bowl.
  • DRIZZLE over the dressing and toss gently until everything is lightly coated and glossy.
  • ADD your choice of protein, I added a tin of drained chickpeas
  • SERVE immediately on its own or topped with your favourite add-ins.
NOTES + INSPIRATION
Verjuice gives the dressing a softer, gentler acidity that feels beautifully fresh and elegant. Red wine vinegar creates a more classic rustic Italian flavour.
Toasting the pine nuts makes all the difference and adds incredible flavour and crunch.
This salad is delicious served alongside grilled meats, seafood or Paul’s crispy parmesan crusted roasted potatoes.
You can swap feta for shaved pecorino or parmesan for a more Caesar-style finish.
For extra protein, add eggs or grilled chicken.
