Ingredients
- 2 baby cos romaine lettuce, finely shredded into ribbons
- 2 spring onions finely chopped
- Pinch of sea salt
- Handful fresh dill finely chopped
- Handful fresh mint finely chopped
- 60 g feta crumbled
- 2 - 3 tablespoons extra virgin olive oil
- Juice of ½ lemon or a generous splash of verjuice for a softer acidity
- Sea salt to taste
Method
- Finely chop the lettuce and place into a large mixing bowl.
- Add the spring onion, a pinch of salt, fresh dill and mint.
- Sprinkle over the feta.
- Squeeze over the juice from half a lemon and add the olive oil.
- Mix well using your hands and gently toss everything together until the leaves are lightly coated and glossy.
- Taste and adjust seasoning and flavours if needed, then serve immediately.
- Enjoy alone or with your choice of protein for a complete meal. I love folding through creamy white cannellini beans or serving alongside roast chicken or fish.
