About the recipe

This vibrant lemon, parsley and mint salsa verde is one of those simple recipes that instantly transforms everyday meals into something special. Fresh, zesty and beautifully balanced, it’s a Mediterranean-inspired green sauce that brings dishes to life with minimal effort and maximum flavour.
Parsley is rich in antioxidants and supports natural detoxification pathways, while mint helps soothe digestion and reduce bloating. Lemon and orange juice provide vitamin C to support immunity, collagen production and skin health.
Extra-virgin olive oil supplies heart-healthy monounsaturated fats that help stabilise blood sugar and improve the absorption of fat-soluble vitamins from herbs and vegetables. Together, these simple wholefood ingredients create a light, anti-inflammatory sauce that supports gut health, metabolic health and overall vitality.
Naturally gluten-free, dairy-free and plant-based, this Mediterranean-style salsa verde is an easy way to add flavour, freshness and nourishment to salads, grilled proteins and vegetables — without relying on processed dressings or added sugars.
This is the kind of sauce you’ll want to keep on rotation — drizzle it over grilled fish or chicken, roasted vegetables, salads, eggs and more... It keeps beautifully in the fridge for several days, making healthy eating feel effortless, vibrant and delicious.

Notes & Inspiration
Add a handful of baby spinach or rocket when blending for extra chlorophyll, minerals and a deeper green colour.
Turn it into a luxe avocado mayo: Blend in 1 ripe avocado for a creamy, spoonable version that’s beautiful with grilled fish, roast chicken, sweet potato or as a sandwich spread.
Add 3 tablespoons Greek yoghurt or kefir for a lighter, probiotic-rich dressing that’s perfect for salads and bowls.
Prefer it sharper? Use more lemon and delete the orange...or replace the orange with 60 ml verjuice or good chardonnay vinegar.
