About the recipe

Eat Healthy – Spend Less
My leftover roast chicken bolognese is one of my favourite ways to turn yesterday’s dinner into a nourishing, budget-friendly meal the whole family will love. By repurposing cooked roast chicken with simple pantry ingredients, you create a rich, comforting sauce while cutting food waste and stretching your grocery budget further.
Slow-cooked onion, carrot, celery and garlic form the base of this lighter bolognese, with tomatoes and lentils adding depth, fibre and protein. The leftover chicken is stirred through at the end to keep it tender and full of flavour — proof that economical cooking never has to feel second-best.
This is smart, everyday cooking: one roast chicken, multiple meals, less waste and more value. Serve it with pasta, vegetables or a lighter bowl of leafy greens and enjoy a comforting classic that’s good for your body, your wallet and the planet.
