Ingredients

  • 2 brown onions finely sliced
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic sliced
  • 500 g mushrooms sliced (button, Swiss brown or mixed)
  • 1 litre chicken bone broth or chicken stock / vegetable stock for plant-based
  • Pinch sea salt and white pepper to taste
  • 2 tablespoons tamari or soy sauce to taste

Optional Additions

  • 1 tin cannellini beans drained (for added protein + fibre)
  • To Serve
  • Natural yoghurt or coconut milk to swirl
  • Fresh herbs parsley or thyme, optional
  • Sourdough bread toasted, with hummus

Method

  • Heat the olive oil in a large pot over medium heat.
  • Add the sliced onion and cook for 6 - 8 minutes, stirring occasionally, until soft, sweet and lightly caramelised.
  • Stir in the garlic and cook for 1 minute until fragrant.
  • Add the mushrooms and cook for 6–8 minutes, allowing them to soften and lightly caramelise.
  • If needed, add a small splash of water to help the mushrooms cook down.
  • Pour in the bone broth (or stock) and bring to a gentle boil.
  • Reduce heat and simmer, partially covered, for 10 minutes to allow the flavours to develop.
  • Remove from heat and blend the soup until silky and smooth using a stick blender or high-speed blender.
  • If using cannellini beans, add them before blending for extra creaminess, protein and fibre - particularly good if making a vegetarian version.
  • Return the soup to low heat.
  • Stir in tamari, then season with salt and white pepper to taste.
  • Ladle into bowls and finish with a swirl of yoghurt or coconut milk.
  • Top with fresh herbs if desired and serve with warm sourdough + hummus.
