About the recipe
This nourishing chicken soup is deeply personal to me. When I was little, my great-aunt would make a traditional Polish chicken soup called Rosół whenever someone was run down, fighting a cold or flu, or simply in need of comfort. I still remember how healing it felt — warm, fragrant and soothing, with every spoonful restoring strength and calm. This is my modern, wellness-focused take on that beautiful tradition.Packed with garlic, ginger and turmeric, this immune-boosting chicken soup is rich in natural antiviral, antibacterial and anti-inflammatory compounds that help support the immune system, improve circulation, aid digestion and reduce inflammation. Fresh coriander adds another layer of detoxifying and disease-fighting benefits, while slow-simmered chicken provides essential amino acids and protein to help the body repair, recover and stay strong.Simple, restorative and deeply comforting, this is the kind of soup your body craves in winter — whether you’re feeling under the weather or just want to nourish yourself from the inside out. It’s warmth, healing and love in a bowl.

- 1 bulb garlic peeled and chopped
- 30 g fresh grated ginger
- 10 g fresh grated turmeric
- 3 litres filtered water
- 1 leek sliced
- 800 g skinless chicken thighs cut into chunks
- 1 bunch of coriander chopped
- 60 ml mirin
- 2 tablespoons tamari soy sauce
- 3 spring onions sliced
Method
- COMBINE the chicken, leek, garlic, turmeric, ginger and water into a large pot.
- SIMMER for 45 minutes over a gentle heat until chicken thighs are cooked through and flavours have infused into the stock.
- ADD mirin, tamari, spring onion and coriander just before serving.
- SERVE in large bowls and enjoy.
Vegetarian version: Swap the chicken for organic silken tofu (add it at the very end before serving) and use a good-quality vegetable stock instead of water.
Extra immune boost: Add grass fed or marine collagen powder to the soup for added benefits.
Make it heartier: Serve with rice noodles, glass noodles or buckwheat soba for a more substantial meal.
Gentle detox: Finish with a squeeze of fresh lemon or lime to support digestion and brighten the flavours.
Spice it up: Add a little fresh chilli or chilli oil if you like gentle heat to stimulate circulation.
Freezer-friendly: This soup freezes beautifully — make a double batch and keep portions on hand for busy weeks or when you’re feeling run down.
