This refreshing salad is light, delicious and high in antioxidants and plant protein. Honeydew melon and cucumber boost electrolytes, and vitamin C for skin and immune health. Edamame beans add protein, fibre, and is oflavones that support heart health and hormone balance. Olive oil adds healthy monounsaturated fats that support heart health whilst matcha tea help to support a healthy metabolism and leaned toned muscle. I love this salad on its own or served on a bed of whipped silken tofu that adds creaminess.
