About the recipe
This is one of those recipes that proves simple ingredients can be quietly spectacular. Sweet, caramelised honey-roasted carrots piled onto a cloud of whipped cottage cheese, lightened with Greek yoghurt for a gentle tang, then finished with a bright honey-lemon drizzle. It’s comforting, elegant and incredibly satisfying. The contrast is what makes this dish sing — warm and golden carrots against a cool, creamy base, with just enough sweetness and acidity to keep everything balanced. High in protein, rich in calcium and full of flavour, this is a nourishing dish that feels indulgent without being heavy.Serve it as a beautiful side, a light lunch with crusty sourdough, or as part of a generous sharing table. It’s the kind of recipe you’ll come back to again and again — effortless to make, endlessly versatile, and proof that vegetables can be the star of the show.

Method
- PREHEAT your oven to 220°C fan-forced.
- STEAM OR BOIL the carrots for 10 minutes until tender. Drain, then place onto a large lined baking tray.
- DRIZZLE with olive oil, add the honey, season generously with salt and toss to coat well.
- ROAST for 20 minutes until the carrots are lightly caramelised.
- MAKE the whipped cottage cheese whilst the carrots are roasting.
- COMBINE cottage cheese, Greek yoghurt and lemon zest into a bowl, whisk well.
- TO SERCE, spoon the whipped cottage cheese onto a serving platter and swoosh gently with the back of a spoon.
- TOP with the warm honey-roasted carrots, allowing the heat to soften the cream underneath.
- EMBELLISH with a drizzle of honey a squeeze of lemon and a sprinkle of toasted nuts, chilli flakes or fresh herbs.
