About the recipe
My low carb, high protein Greek-style tuna fritters are a true classic — first developed over 20 years ago for my 80/20 Diet Cookbook and lovingly refined with extra Mediterranean flavour. Light yet satisfying, they’re gluten-free, rich in omega-3 fatty acids, and designed to support lean muscle, heart health, and stable blood sugar levels.Made with pantry staples like tuna, eggs, almond meal, fresh herbs, lemon zest, and feta, these fritters deliver everything we love about the Mediterranean diet: simple ingredients, bold flavour, and nourishing fats. Served with a cooling homemade tzatziki, they’re perfect for a healthy lunch or dinner and taste just as good hot or cold. One of the best things about this recipe is its versatility — cook the fritters in a pan, bake them in the oven, or turn the mixture into protein-rich savoury muffins for easy meal prep. They store beautifully in the fridge, making them ideal for busy weeks, lunchboxes, or light entertaining.
