Notes & Inspiration
This recipe serves 4 as a light meal or 2–3 as a generous main — it’s very adaptable depending on how hungry you are or whether you’re feeding a crowd.
It’s perfect for meal prep — the chicken salad keeps beautifully in an airtight container in the fridge for up to 3 days, and actually gets better as the flavours develop.
Serve it in crisp lettuce cups for a light, low-carb option, or pile it onto toasted sourdough, rye or seed bread for a more substantial lunch.
It’s also delicious stirred through warm brown rice, quinoa or cauliflower rice for an easy protein bowl.
For a twist, try a pinch of curry powder, smoked paprika or sumac to take it in a new direction.
This is a wonderful work-from-home lunch, picnic filler or post-workout meal — high in protein, nourishing and satisfying without feeling heavy.
