  • 2 cloves garlic thinly sliced
  • 500 g leeks washed + sliced, 2 total
  • 2 celery stalks chopped
  • 500 g zucchini sliced, 2 total
  • 1 head broccoli florets + stalk sliced
  • 1 tsp mild curry powder
  • ½ tsp ground turmeric
  • 4 –5 cups hot filtered water from the kettle
  • 2 handfuls baby spinach leaves

  • Turn off the heat. Add the spinach and allow it to wilt gently into the soup.
  • Blend until smooth and creamy using a high-speed blender or stick blender.
  • Taste and adjust seasoning if needed.
  • Serve warm with fresh sourdough on the side.
  • Top your sourdough with avocado and a sprinkle of sea salt. Add a dollop of yoghurt to your soup before serving.
