About the recipe

Creamy. Vibrant. Fresh. Completely addictive.

This Green Goddess Cabbage Salad is one of those beautifully simple recipes that proves healthy food can still be incredibly satisfying. Finely chopped cabbage is lightly massaged with lemon and sea salt to soften the fibres, then tossed in a silky herb-packed avocado dressing that’s creamy, bright and full of fresh flavour.
The dressing blends basil, parsley, spinach and avocado with lemon and olive oil to create a vibrant green goddess sauce that coats every crunchy bite of cabbage. It’s naturally vegan, gluten-free, dairy-free and rich in plant nutrients, making it the perfect salad for clean eating and everyday wellbeing.
Even better — this salad keeps beautifully for up to 4 days, making it ideal for meal prep. Add white beans, edamame, grilled tofu or roasted chicken for a complete high-protein meal.
Fresh. Nourishing. Deliciously creamy. This is the kind of salad you’ll crave again and again.

Salad

  • 500 g green cabbage finely chopped
  • 1 lemon juiced
  • Pinch sea salt
  • 3 spring onions finely sliced
  • Handful cashew nuts or pine nuts

Green Goddess Dressing

  • 1 ripe avocado
  • 1 bunch fresh basil leaves
  • Small handful parsley leaves
  • 30 g baby spinach leaves
  • 1 spring onion
  • Juice of 1 lemon
  • 60 ml extra virgin olive oil
  • 1 teaspoon sea salt
  • 2 –3 tablespoons nutritional yeast flakes optional, for a cheesy flavour
  • 120 ml cold water

Method

  • Place the chopped cabbage into a large mixing bowl.
  • Add the lemon juice and a pinch of sea salt. Using clean hands, gently massage the cabbage for about 1 minute. This softens the fibres, tenderises the cabbage and makes it much more delicious to eat.
  • Add the sliced spring onions and cashew nuts or pine nuts to the bowl and set aside.
  • To make the dressing place the avocado, basil, parsley, spinach, spring onion, lemon juice, olive oil, salt, nutritional yeast and cold water into a blender.
  • Blend until completely smooth and creamy. Taste and adjust seasoning if needed.
  • Pour the dressing over the cabbage mixture and toss well until everything is beautifully coated.
  • Serve immediately or refrigerate until ready to enjoy.
