  • 3 eggs large, organic or free range
  • 1 tablespoon honey raw
  • 1 teaspoon vanilla extract
  • 90 g wholemeal spelt flour or gluten free flour
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 200 g walnuts
  • 400 g dried fruit raisins or sultanas, prunes, figs, apricots, peaches, pears big juicy chunks.

Method

  • PREHEAT your oven to 160°C fan forced.
  • COMBINE eggs, honey and vanilla into a large bowl and beat well.
  • ADD your flour, baking powder, salt and cinnamon, then mix to form a smooth batter.
  • ADD your walnuts and dried fruits, then mix well through the batter until all the nuts and fruits are coated.
  • SPOON the mix into a loaf tin, making sure to press down firmly, so it’s all compact.
  • BAKE for 60 minutes, covering with foil after 40 minutes to prevent overbrowning.
  • COOL completely before slicing. Best to wait at least 4 hours.
  • STORE at room temperature for up to 2 weeks or in the fridge for 4 weeks.
