- ½ cup Arborio or sushi rice or Jasmine rice
- 4 cups milk of choice full cream dairy, soy or oat, almond, rice plus extra if required
- 1 teaspoon vanilla extract or seeds from 1 vanilla bean
- Pinch of sea salt
- 1 cinnamon stick optional
To Serve
- Ground cinnamon
- Coconut sugar
- Thick Greek yoghurt optional
Strawberry Compote (Optional)
- 500 g strawberries sliced
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice
- 2 tablespoons water
- Optional: 1 teaspoon cornflour mixed with 1 tablespoon water if you'd like a thicker compote.
Method
Rice Pudding
- Combine the rice, milk, vanilla and sea salt into a heavy based pot.
- Bring to a gentle simmer, then reduce the heat to low. Partially cover.
- Cook for 35–40 minutes, stirring regularly, until the rice is tender and the pudding is beautifully creamy. Add more milk or water if needed.
- Spoon into serving bowls and finish with a dusting of cinnamon and coconut sugar.
- Alternatively...serve with the strawberry compote or a dollop of Greek yoghurt if desired.
- Serve warm or cold.
Strawberry Compote
- Place the 250 g sliced strawberries, maple syrup, lemon juice and water into a small saucepan.
- Simmer gently for 2 minutes, until the berries begin to soften and release their juices.
- Fold through the remaining 250 g fresh strawberries.
- Spoon generously over the warm or chilled rice pudding.
- Arborio rice creates the creamiest texture, although sushi rice also works beautifully.
- The pudding will continue to thicken as it cools. Simply stir through a splash of milk before serving if you'd like a looser consistency.
- Naturally sweet without added sugar, this pudding is delicious topped with cinnamon, coconut sugar, fresh berries, poached fruit or a spoonful of Greek yoghurt.
