About the recipe

Soft, moist and beautifully nourishing…this Salted Caramel Banana Bread tastes like something you’d find in a beautiful wholefood café, yet it’s made with simple wholesome ingredients in one bowl.
Naturally sweet bananas are blended with creamy nut butter, almond meal and salted caramel protein powder to create the most delicious high-protein banana bread that’s soft, comforting and incredibly satisfying.
I love this recipe because it feels indulgent while still supporting energy, satiety and wellbeing. Each slice is packed with plant protein, healthy fats and fibre to help keep you fuller for longer — making it perfect for breakfast, afternoon tea or a healthy little snack with coffee.
The almond meal gives this loaf a rich buttery texture without dairy or gluten, while bananas provide natural sweetness, potassium and prebiotic fibre to support gut health. The added protein helps support muscle repair, blood sugar balance and sustained energy throughout the day.
And honestly…the combination of salted caramel, banana and dark chocolate is just magic.
Finished with a creamy salted caramel protein frosting and topped with extra banana, this loaf is wholesome comfort food at its absolute best.
Perfect served slightly warm, chilled from the fridge or toasted the next day.

  • 1 banana sliced lengthways for decoration

PROTEIN FROSTING (OPTIONAL)

  • 250 ml coconut yoghurt
  • 2 tbsp Pea Protein Powder
  • 1 tsp maple syrup or monk fruit sweetener

Method

  • PREHEAT the oven to 160°C fan-forced.
  • LINE a loaf tin with baking paper.
  • MASH the bananas in a large bowl then stir through the peanut butter and maple syrup until smooth and creamy.
  • ADD the almond meal, protein powder, baking powder, salt and cinnamon.
  • POUR IN the milk and mix gently to form a thick batter.

  • SPOON the batter into the prepared loaf tin and smooth the top. Decorate with extra banana if desired.
