Ingredients
- 3 small Lebanese cucumbers thinly sliced (or 1 telegraph cucumber, peeled and sliced)
- 2 avocados peeled, quartered and sliced
- 1 1/2 cups shelled edamame blanched + cooled
- 2 spring onions sliced
- 1 handful mint and coriander chopped (or just mint if preferred)
Optional
- Greek yoghurt to serve
Dressing
- Juice of 1 lime or 60 ml verjuice for a beautiful, softer acidity
- 3 tablespoons extra virgin olive oil
- 2 teaspoons raw honey to taste
- Pinch sea salt
- Fresh cracked pepper
To Finish
- Toasted sesame seeds
- Extra herbs
Method
- Place the sliced cucumber, avocado, edamame, spring onions and herbs into a large bowl.
- In a separate bowl, whisk together the lime juice (or verjuice), olive oil, honey, salt and pepper until well combined.
- Pour the dressing over the salad and gently toss to coat.
- Transfer to a serving platter and scatter with toasted sesame seeds and extra fresh herbs.
- Serve immediately, on its own or with a creamy dollop of Greek yoghurt if desired.
