Why you’ll love it
This is one of those salads that delivers both flavour and function. It’s crunchy, juicy and deeply satisfying, yet light enough to leave you feeling energised rather than heavy. Think of it as everyday nourishment in a bowl — vibrant, colourful and full of ingredients that support total wellbeing.
Antioxidant-rich goodness
Purple cabbage and blueberries are rich in polyphenols and vitamin C, helping support skin health, immunity and cellular protection. Walnuts bring heart-loving omega-3 fats, while extra-virgin olive oil adds anti-inflammatory benefits and beautiful flavour.
Gut-friendly + fibre-rich
Massaging the cabbage with lemon and salt gently softens the fibres, making it easier to digest while enhancing flavour. The combination of cabbage, herbs and nuts provides plenty of fibre to support a happy, balanced gut.
Make it a meal
This salad is beautiful on its own, but also works as a base for a more substantial bowl: Add roasted salmon or grilled chicken for protein - Toss through chickpeas or lentils for a plant-based option - Add avocado for extra creaminess and healthy fats
Perfect for meal prep
It keeps well in the fridge for 4 days and actually tastes even better after a little time to sit. The cabbage holds its crunch, making it ideal for prepping ahead for lunches or easy dinners.
A bowl for everyday wellness
