About the recipe

Lighter Caesar Salad (Creamy, Protein-Rich & Feel-Good)
My Lighter Caesar Salad delivers everything you love about a classic Caesar — creamy dressing, satisfying crunch and bold flavour — with a fresh, modern, feel-good twist. Crisp baby gem or cos lettuce and peppery rocket form the base, layered with protein-rich eggs and chickpeas, fragrant basil and crunchy pistachios for texture and nourishment.
The creamy Caesar-style dressing is made with Greek yoghurt instead of mayonnaise, creating a lighter, gut-friendly sauce that’s high in protein and lower in saturated fat. A squeeze of fresh lemon brightens the flavours, while a touch of maple syrup or honey balances the acidity for a perfectly rounded finish.
This salad is naturally gluten-free, vegetarian, and rich in fibre, protein and healthy fats — making it ideal for blood-sugar balance, sustained energy and everyday wellness. Enjoy it as a satisfying lunch, a light dinner, or serve alongside grilled chicken, fish or prawns for an elevated, restaurant-style meal at home.
Simple, nourishing and deeply satisfying — this is Caesar salad, re-imagined the Teresa Cutter way.

Notes & Inspiration
Serve alongside thick-cut toasted sourdough or a warm slice of grilled focaccia to mop up the creamy dressing — simple and so satisfying.
Make it low carb by swapping the chickpeas for cooked chicken, prawns, tuna, poached salmon, tofu or cottage cheese.
For a lighter option, use egg whites only or swap the eggs for extra chickpeas or white beans.
Swap pistachios for toasted almonds, walnuts or pine nuts depending on what you have on hand.
Best dressed just before serving to keep the leaves crisp and fresh.
