Ingredients
SALAD
- ½ green cabbage finely shredded
- Pinch of sea salt
- Juice of 1 lime
- 1 small carrot finely grated (optional)
- 1 –2 generous handfuls bean sprouts
- 2 spring onions sliced
- small bunch fresh mint chopped
- small bunch fresh coriander chopped
- 30 g roasted cashews roughly chopped
- 1 - 2 tbsp toasted sesame seeds
DRESSING
- 2 tbsp tamari soy sauce
- 1 tsp fresh grated ginger
- 1 tbsp rice vinegar or lime juice start with 1, adjust to taste
- 1 tbsp maple syrup or raw honey adjust to taste
- 1 tsp sesame oil
- 1 - 2 tbsp olive oil or avocado oil
Method
- Place the finely shredded cabbage into a large bowl. Add the lime juice and a pinch of sea salt.

- Using your hands, gently massage the cabbage for about 1 minute until it softens and becomes silky. This step breaks down the fibres and transforms the cabbage into something incredibly tender and delicious to eat.
- Add the carrot, spring onion, fresh herbs and bean sprouts.
- Whisk together the dressing ingredients, then pour over the salad.
- Add half the cashews and sesame seeds, then toss everything together until well combined.
- Spoon onto a serving platter and finish with the remaining cashews, sesame seeds and extra fresh herbs.
NOTES & INSPIRATION
Make it a complete meal: Add your choice of protein. Grilled salmon is beautiful with this, or try chicken, tofu, edamame or chickpeas for a plant-based option.
