Ingredients

Switch measurement units

  • 180 g gluten-free brown rice pasta
  • 280 g tuna in olive oil lightly drained
  • 3 organic eggs medium – hard boiled

Roasted vegetables

  • 300 g cherry tomatoes
  • 1 medium zucchini sliced
  • Β½ red onion sliced
  • 2 tbsp olive oil
  • Pinch sea salt

Salad additions

  • 2 tbsp pitted black olives sliced
  • 1 tbsp capers
  • 2 roasted red capsicums peeled and sliced
  • Handful fresh basil leaves
  • Handful rocket leaves

Dressing

  • Splash of Extra virgin olive oil 1 - 2 tbsp
  • 2 tbsp red wine vinegar
  • 1 tbsp sticky balsamic

Method

  • Preheat oven to 200Β°C.
  • Place the cherry tomatoes, zucchini and red onion on a baking tray. Drizzle with olive oil and season with sea salt.
  • Roast for 18–20 minutes until the tomatoes are blistered and the zucchini is tender and lightly golden. Set aside to cool slightly, keeping all the roasting juices.
  • Cook the pasta according to packet instructions until al dente. Drain and transfer into a large bowl.
  • Bring a saucepan of water to the boil. Gently add the eggs and cook 6–8 minutes, depending on how soft you like them. Transfer immediately to ice water to stop the cooking. Peel and cut in half.
  • Place the cooked pasta in a large bowl. Add the roasted tomatoes, zucchini and onion with their juices, followed by the roasted capsicum, olives, capers, basil and rocket.
  • Flake the tuna into large chunks over the salad.
  • Drizzle over the red wine vinegar, sticky balsamic and a splash of olive oil β€” nothing fancy, you want to keep it light.
  • Toss the salad gently and pile onto a large serving platter.
  • Arrange the halved eggs over the top and scatter with a few extra basil leaves.
  • Serve slightly warm or chilled.
Notes & Inspiration
Hubby and I are big Formula One fans, so with the excitement of the Melbourne Grand Prix this weekend I wanted to create something fun and nourishing inspired by race-day energy. My Pole Position Tuna Pasta Salad is light, vibrant and packed with flavour β€” the kind of meal that fuels you without slowing you down.
Gluten-free and gentle on digestion
Using gluten-free brown rice pasta keeps this dish light and easy to digest while still providing satisfying carbohydrates for steady energy. It’s a wonderful option if you’re avoiding wheat or simply prefer a lighter pasta.
High protein and beautifully balanced
The combination of tuna in olive oil and eggs provides excellent quality protein to help keep you full and satisfied. Paired with vegetables and healthy olive oil fats, this salad becomes a wonderfully balanced meal.
Roasted vegetables make all the difference
Roasting the cherry tomatoes and zucchini concentrates their flavour and adds natural sweetness. Their roasting juices become part of the dressing, making the salad incredibly delicious without the need for heavy sauces.
Mediterranean flavours
Olives, capers, basil and roasted capsicum give this salad a lovely Mediterranean feel β€” bright, savoury and fresh. It’s simple food that feels abundant and satisfying.
Perfect for meal prep
This salad keeps beautifully in the fridge for a day or two, making it perfect for easy lunches, quick dinners or sharing with friends.
Serve it your way
Enjoy slightly warm for dinner or chilled straight from the fridge for a refreshing lunch. Replace the pasta with more vegetables or leafy greens for a low carb option.
